In a small bowl, whisk together balsamic vinegar, honey, olive oil, minced garlic, salt, and pepper. Set aside.
Season the chicken breasts with salt and pepper. Heat a large skillet over medium-high heat and add a drizzle of olive oil.
Once the skillet is hot, add the chicken breasts. Cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F / 75°C).
When the chicken is nearly done, pour the balsamic mixture over the chicken in the skillet, allowing it to simmer for 2-3 more minutes. This will create a delicious glaze.
Add sliced strawberries to the skillet during the last minute of cooking, tossing gently to coat them in the balsamic glaze.
Once the chicken is fully cooked and the strawberries are warm, remove the skillet from heat.
Serve the chicken on a platter, drizzling with any remaining balsamic glaze and topping with fresh basil and mint for garnish.
