Instructions
Preheat your oven to 400°F (200°C).
In a mixing bowl, combine the shredded chicken with BBQ sauce and toss until the chicken is well coated.
Lightly brush each flatbread with olive oil and season with salt and pepper.
Place the flatbreads on a baking sheet lined with parchment paper.
Evenly distribute the BBQ chicken mixture over each flatbread, ensuring each piece gets a fair share.
Sprinkle the shredded mozzarella cheese generously on top of the chicken.
Add the sliced red onions and corn evenly across the flatbreads for a pop of sweetness.
Bake in the preheated oven for about 10-12 minutes, or until the cheese is melted and bubbly with a slight golden hue.
Once baked, remove from the oven and let it cool for a couple of minutes.
Garnish the flatbreads with chopped cilantro before slicing them into wedges. Serve warm.
