Take each chicken breast and carefully slice a pocket into the side, making sure not to cut all the way through.
Stuff each chicken breast with the broccoli and cheese mixture, ensuring it's evenly filled. Secure the openings with toothpicks if needed.
Roll the stuffed chicken in bread crumbs to create a crispy coating.
Heat olive oil in a skillet over medium-high heat. Sear each stuffed chicken breast until golden brown on both sides (about 3-4 minutes per side).
Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
Once baked, let the chicken rest for 5 minutes. Then, remove the toothpicks if used and slice each chicken breast in half to reveal the cheesy broccoli stuffing.
Garnish with freshly chopped parsley before serving.
