Ingredients

1 lb ground chicken

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup buffalo sauce (plus extra for tossing)

1 small onion, finely chopped

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

1/2 teaspoon dried parsley

1 egg, beaten

Instructions

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, buffalo sauce, chopped onion, minced garlic, salt, black pepper, paprika, dried parsley, and the beaten egg.

Mix everything together until well combined, being careful not to overwork the meat.

Use your hands to form the mixture into meatballs, about 1 inch in diameter. Place the meatballs onto the prepared baking sheet, leaving enough space between them.

Bake the meatballs in the preheated oven for about 20-25 minutes or until they are cooked through and have an internal temperature of 165°F (74°C).

Once the meatballs are done, remove them from the oven and toss them in a bowl with additional buffalo sauce until coated.

Serve warm with a side of celery sticks and your favorite dipping sauce (such as blue cheese or ranch dressing).
