In a medium bowl, mash the chickpeas lightly with a fork or potato masher, leaving some whole for texture.
In a skillet over medium heat, add olive oil and the mashed chickpeas. Stir in buffalo sauce, apple cider vinegar, maple syrup, garlic powder, smoked paprika, salt, and pepper. Cook for about 5-7 minutes, stirring occasionally until heated through and slightly caramelized.
Lay out the whole grain wraps on a clean surface. In the center of each wrap, layer the shredded lettuce, mashed buffalo chickpea mixture, sliced avocado, and crumbled blue cheese if using.
Fold in the sides of the wrap and then roll from the bottom up to create a tight wrap. Repeat with the remaining wraps.
Slice each wrap in half diagonally for a better presentation. Garnish with chopped green onions on top.
