Ingredients
  

1 pound ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) enchilada sauce

1 cup canned black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

2 cups cooked rice (white or brown)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

Fresh cilantro, chopped (for garnish)

1 avocado, diced (for serving)

Sour cream (for serving)

Instructions
 

In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain any excess fat.

    Add the diced onion and minced garlic to the skillet. Sauté until the onion is soft and translucent, about 3-4 minutes.

      Stir in the enchilada sauce, black beans, corn, chili powder, cumin, salt, and pepper. Bring the mixture to a simmer.

        Add the cooked rice to the skillet, stirring well to combine all the ingredients. Let it simmer for an additional 5 minutes, allowing the flavors to meld.

          Sprinkle the shredded cheddar and Monterey Jack cheese evenly over the top of the dish. Cover the skillet with a lid and let it cook for another 3-5 minutes until the cheese is melted and bubbly.

            Remove from heat and garnish with fresh cilantro. Serve hot with diced avocado and a dollop of sour cream on top.
