4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1 clove garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh basil leaves for garnish

Preheat your oven to 375°F (190°C).

    Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

      In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant.

        Add the chopped spinach to the skillet and cook until just wilted, about 2-3 minutes. Remove from heat and let cool slightly.

          In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, and the cooked spinach. Mix well and season with a pinch of salt, pepper, and red pepper flakes if using.

            Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, avoiding cutting all the way through.

              Stuff each chicken breast with the spinach and ricotta mixture, using toothpicks to secure the openings if needed.

                Place the stuffed chicken breasts in a greased baking dish. Sprinkle the remaining mozzarella and Parmesan cheese over the tops of the chicken.

                  Bake in the preheated oven for about 25-30 minutes, or until the chicken is cooked through and the cheese is golden and bubbly.

                    Once done, remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh basil leaves.
