Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons tahini

1 tablespoon lemon juice

1 tablespoon olive oil

1 teaspoon Dijon mustard

1 small red onion, finely chopped

1/2 cucumber, diced

1/4 cup fresh parsley, chopped

Salt and pepper to taste

4 slices whole-grain bread

1/2 cup shredded mozzarella cheese (or vegan cheese)

Instructions
 

In a medium mixing bowl, mash the chickpeas with a fork until chunky but not completely pureed.

    Add the tahini, lemon juice, olive oil, and Dijon mustard to the bowl and mix until well combined.

      Stir in the chopped red onion, diced cucumber, and fresh parsley into the chickpea mixture. Season with salt and pepper to taste.

        Preheat your oven to 375°F (190°C).

          On a baking sheet, lay out the slices of whole-grain bread.

            Generously spoon the chickpea salad mixture onto each slice of bread, spreading it evenly.

              Top each chickpea salad melt with shredded mozzarella cheese.

                Bake in the preheated oven for about 10-12 minutes, or until the cheese is bubbly and slightly golden.

                  Remove from the oven and let cool for a minute before serving.
