Instructions
Preheat your oven to 400°F (200°C).
Spread the drained and rinsed chickpeas on a clean kitchen towel and pat them dry. It's important to remove excess moisture for maximum crispiness.
In a mixing bowl, combine the olive oil, chili powder, smoked paprika, cumin, garlic powder, lime zest, salt, and pepper.
Add the dried chickpeas to the bowl and toss them well in the spice mixture until they are evenly coated.
Line a baking sheet with parchment paper and spread the seasoned chickpeas out in a single layer.
Roast in the preheated oven for 25-30 minutes, shaking the pan halfway through, until they are golden brown and crispy.
Remove from the oven and immediately squeeze the lime juice over the roasted chickpeas for a zesty hit of flavor.
Let them cool slightly before serving. Garnish with chopped fresh cilantro if desired.
