300g udon noodles

4 tablespoons chili oil

2 cloves garlic, minced

1-inch piece ginger, grated

2 green onions, sliced

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon sugar

Salt, to taste

Sesame seeds for garnish

Fresh cilantro leaves, for garnish

Cook the Udon Noodles: In a large pot of boiling water, add the udon noodles and cook according to package instructions (typically around 8-10 minutes). Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a small bowl, mix together the chili oil, soy sauce, sesame oil, grated ginger, minced garlic, and sugar. Stir until combined. Adjust the heat by adding more chili oil if desired.

      Sauté Vegetables: In a large skillet or wok over medium-high heat, add a splash of sesame oil. Once hot, add the sliced red bell pepper and snap peas. Stir-fry for about 2-3 minutes until they begin to soften but still retain some crunch.
