Prepare the Chimichurri Sauce: In a medium bowl, combine chopped parsley, cilantro, garlic, red pepper flakes, 1/4 cup olive oil, and vinegar. Season with salt and pepper to taste. Stir well and let it sit for at least 20 minutes to meld the flavors.
Prepare the Steak: Season the flank steak with olive oil, salt, and pepper on both sides.
Cook the Steak: Heat a grill or skillet over medium-high heat. Cook the steak for about 5-7 minutes on each side or until it reaches your desired doneness (medium-rare is recommended). Remove from heat and let it rest for 5 minutes.
Slice the Steak: After resting, slice the steak thinly against the grain.
Warm the Tortillas: In a dry skillet, warm the corn tortillas for about 30 seconds on each side, until pliable.
Assemble the Tacos: Place a few slices of steak on each tortilla. Top with cherry tomatoes, red onion, slices of avocado, and a generous spoonful of chimichurri sauce.
Garnish and Serve: Garnish with fresh cilantro and serve immediately.
