Preheat your oven to 200°F (93°C) and line two baking sheets with parchment paper.
Wash and dry the apples. Using a mandoline slicer or a sharp knife, slice the apples very thinly (about 1/8 inch thick).
In a small bowl, mix the granulated sugar, ground cinnamon, and pinch of salt together.
Place the apple slices in a large bowl and drizzle with lemon juice, tossing gently to coat.
Sprinkle the cinnamon-sugar mixture over the apple slices, ensuring they are evenly coated.
Lay the apple slices in a single layer on the prepared baking sheets, making sure they do not overlap.
Bake in the preheated oven for 2-3 hours, flipping the apple slices halfway through, until they are crisp and dry. The exact time may vary, so keep an eye on them after the first hour.
Once the apple chips are done, remove them from the oven and let them cool completely on the baking sheets.
Notes
Serve in a decorative bowl or wrap in parchment paper for a charming presentation.
