1 lb ground beef or turkey

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (frozen or fresh)

1 tablespoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (cheddar or a Mexican blend)

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Brown the Meat: In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

      Add Garlic and Meat: Stir in the minced garlic, then add the ground beef or turkey. Cook for about 6-8 minutes, breaking it up with a spoon, until it's browned and cooked through.

        Season: Add the chili powder, cumin, smoked paprika, salt, and pepper to the meat mixture. Stir well to combine the spices.

          Combine Ingredients: Pour in the diced tomatoes with green chilies, black beans, and corn. Stir everything together and let it simmer for about 5 minutes to allow the flavors to meld.

            Mix Pasta: Add the cooked pasta to the skillet, stirring well to coat the pasta with the sauce and ingredients. If the mixture seems dry, add a small splash of water or broth for moisture.

              Cheese It Up: Remove the skillet from heat and sprinkle the shredded cheese on top. Cover the skillet for a couple of minutes until the cheese is melted.

                Serve: Divide the cowboy pasta into bowls. Garnish with fresh cilantro or parsley if desired.
