orzo pasta

broccoli florets

whole milk

butter

all-purpose flour

onion, finely chopped

cloves
garlic, minced

teaspoon
Dijon mustard

Instructions
In a large saucepan, melt the butter over medium heat. Add the chopped onion and sauté for about 3-4 minutes until softened.
Stir in the minced garlic and cook until fragrant, about 1 minute.
Add the flour to the onion mixture and whisk together for about 2 minutes to create a roux.
Gradually pour in the vegetable broth while continuously whisking to avoid lumps. Bring the mixture to a simmer.
Once simmering, stir in the orzo and cook for about 8-10 minutes until the orzo is al dente, stirring frequently.
During the last few minutes of cooking, add in the broccoli florets.
Once the orzo and broccoli are cooked, reduce the heat to low and stir in the whole milk and Dijon mustard.
Gradually sprinkle in the shredded cheddar cheese, stirring until melted and creamy.
Season with salt and pepper to taste, and adjust consistency with more milk if desired.
Serve warm, garnished with fresh parsley if using.
