Instructions
In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside.
In a bowl, toss the chicken strips with Cajun seasoning, ensuring they are evenly coated.
In a large skillet over medium-high heat, heat the olive oil. Add the seasoned chicken strips and sear until fully cooked and golden brown, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the diced onion, and sauté for about 2-3 minutes until translucent. Then, add the minced garlic and sliced red bell pepper. Cook for another 3-4 minutes until the pepper is tender.
Pour in the chicken broth and heavy cream, stirring well to combine. Bring the mixture to a gentle simmer.
Add the cooked chicken back into the skillet along with the fettuccine pasta. Toss to evenly coat the pasta and chicken with the creamy sauce. Season with salt, pepper, and smoked paprika if using.
Let it simmer for an additional 2-3 minutes for the flavors to meld. Remove from heat and garnish with freshly chopped parsley.
