Sauté Chicken: In a large skillet, heat olive oil over medium-high heat. Season the chicken pieces with Cajun seasoning, salt, and pepper. Add the chicken to the skillet and cook for 5-7 minutes, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.
Cook Vegetables: In the same skillet, add the sliced bell pepper and diced onion. Sauté for 3-4 minutes until softened. Add minced garlic and cook for an additional minute until fragrant.
Make the Sauce: Reduce the heat to medium, then pour in the chicken broth and heavy cream. Stir well to combine. Bring the mixture to a simmer and allow it to thicken slightly, about 3-4 minutes.
Combine Ingredients: Return the cooked chicken to the skillet and stir in the cooked penne pasta. Add the grated Parmesan cheese and mix until everything is well coated in the creamy sauce. Adjust seasoning with more salt and pepper if needed.
Serve: Remove from heat and garnish with chopped parsley before serving.
