Instructions
In a large pot, melt the butter over medium heat.
Add the minced garlic and sauté for about 1 minute until fragrant.
Stir in the orzo pasta and cook for another 2 minutes, letting it toast slightly.
Pour in the vegetable broth and bring to a gentle boil.
Reduce the heat to low, cover the pot, and let it simmer for about 10 minutes, stirring occasionally until the orzo is al dente.
Pour in the heavy cream, and stir until fully combined.
Gradually add the grated Parmesan cheese, stirring continuously until the cheese melts and creates a creamy sauce.
Add the chopped spinach, black pepper, nutmeg, and salt. Stir well until the spinach wilts and is evenly distributed.
Taste and adjust seasoning if necessary, then remove from heat.
Serve hot, garnished with freshly chopped parsley on top.
