1 pound large sea scallops, patted dry

2 tablespoons olive oil

2 tablespoons unsalted butter

1 garlic clove, minced

1 teaspoon fresh thyme leaves

Zest of 1 lemon

Salt and freshly ground black pepper to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Start by ensuring the scallops are completely dry; this helps achieve a crispy sear. If needed, pat them with a paper towel.

    Season both sides of the scallops generously with salt and black pepper.

      In a large skillet, heat the olive oil over medium-high heat until shimmering (about 2-3 minutes).

        Carefully add the scallops to the pan, making sure not to overcrowd them. Sear for about 2-3 minutes without moving them, until a golden-brown crust forms.

          Once the first side is golden, gently flip the scallops using tongs. Add the butter, minced garlic, and fresh thyme to the pan.

            Allow the scallops to finish cooking for another 2 minutes, basting them with the melted butter for added flavor.

              Remove the scallops from the skillet and transfer them onto a plate lined with paper towels to absorb excess oil.

                Before serving, sprinkle the lemon zest over the scallops and garnish with freshly chopped parsley.

                  Serve immediately with lemon wedges on the side for an extra zing.
