4 boneless, skinless chicken breasts

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 red bell pepper, diced

1 yellow onion, chopped

2 cloves garlic, minced

1 tablespoon ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

Salt and pepper to taste

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Optional: Sliced avocados, sour cream, and shredded cheese (for serving)

Instructions
 

Prepare the Chicken: Place the chicken breasts at the bottom of the crockpot. Season with salt, pepper, cumin, chili powder, and smoked paprika.

    Add Vegetables: Layer the black beans, corn, diced tomatoes, red bell pepper, onion, and minced garlic over the chicken.

      Mix Ingredients: Squeeze lime juice over the entire mixture and gently stir to combine without disturbing the chicken too much.

        Cook: Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked.

          Shred the Chicken: Once cooked, remove the chicken breasts from the pot and shred them with two forks. Return the shredded chicken back to the crockpot and stir well with the other ingredients.

            Serve: Ladle the mixture into bowls and garnish with fresh cilantro. Add optional toppings such as sliced avocados, sour cream, or shredded cheese as desired.
