4 chicken thighs, bone-in and skin-on

1 cup bell peppers (red, yellow, or green), sliced

1 onion, chopped

3 cloves garlic, minced

1 can (14 oz) diced tomatoes

1 cup chicken broth

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, for garnish

Instructions
 

In a large skillet or Dutch oven, heat the olive oil over medium-high heat.

    Season the chicken thighs with salt and pepper, then add them to the skillet. Sear the chicken for about 5-7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

      In the same skillet, add the chopped onion and sliced bell peppers. Sauté for about 4-5 minutes, until the vegetables are softened.

        Add the minced garlic and cook for an additional 1 minute until fragrant.

          Stir in the diced tomatoes (with their juices), chicken broth, oregano, basil, and red pepper flakes (if using).

            Return the chicken thighs to the skillet, nestling them into the sauce. Bring it to a simmer.

              Cover the skillet and reduce the heat to low. Let it cook for about 30-35 minutes, or until the chicken is cooked through and tender.

                Taste and adjust the seasoning with more salt and pepper if needed.

                  Serve warm, garnished with fresh parsley.
