1 pound ground beef (or Italian sausage)

1 medium onion, chopped

3 cloves garlic, minced

1 (28-ounce) can crushed tomatoes

4 cups beef broth

2 teaspoons dried oregano

2 teaspoons dried basil

1 teaspoon red pepper flakes (optional)

8 ounces uncooked lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil leaves for garnish

Instructions
 

In a large stock pot, heat a drizzle of olive oil over medium heat. Add the chopped onion and sauté until transparent, about 3-4 minutes.

    Add the minced garlic and cook for an additional 1 minute until fragrant.

      Add the ground beef to the pot, breaking it apart with a spoon. Cook until browned and no longer pink. Drain excess fat if necessary.

        Stir in the crushed tomatoes, beef broth, oregano, basil, and red pepper flakes if using. Bring the mixture to a boil.

          Once boiling, reduce the heat to simmer and add the broken lasagna noodles. Cook according to the package directions, typically around 10-12 minutes, or until the noodles are tender.

            Stir in the ricotta cheese until melted and well combined. Season with salt and pepper to taste.

              Ladle the soup into bowls and top each serving with shredded mozzarella and grated Parmesan cheese.

                Garnish with fresh basil leaves before serving.
