8 ounces rice noodles

1 tablespoon vegetable oil

1 clove garlic, minced

1 pound shrimp, peeled and deveined

2 eggs, lightly beaten

1 cup bean sprouts

3 green onions, chopped

3 tablespoons fish sauce

1 tablespoon tamarind paste

2 tablespoons brown sugar

1 lime, juiced

Chopped peanuts for garnish

Fresh cilantro for garnish

Red pepper flakes (optional)

Prepare the Noodles: Cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

    Sauté the Garlic: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add minced garlic and sauté for about 30 seconds, until fragrant.

      Cook the Shrimp: Add the shrimp to the skillet and cook for 2-3 minutes, until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

        Scramble the Eggs: In the same skillet, pour in the beaten eggs and scramble until fully cooked. Push the eggs to the side of the skillet.

          Combine Ingredients: Add the cooked rice noodles to the skillet along with the shrimp, bean sprouts, and chopped green onions. Stir to combine.

            Create the Sauce: In a small bowl, whisk together the fish sauce, tamarind paste, brown sugar, and lime juice. Pour this sauce over the noodle mixture and toss to coat all ingredients evenly.
