Begin by blanching the green beans. Bring a pot of salted water to a boil, then add the green beans, and cook for 3-4 minutes until they are vibrant green and slightly tender.
Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. After a few minutes, drain again and set aside.
In a small bowl, whisk together the soy sauce, grated ginger, minced garlic, sesame oil, honey or maple syrup, and rice vinegar until well combined.
Heat a large skillet over medium-high heat and add the blanched green beans. Sauté for 2-3 minutes to heat them through and add a slight char.
Pour the ginger soy glaze over the green beans, tossing to coat evenly. Cook for an additional 2-3 minutes, letting the glaze thicken and adhere to the beans. Season with salt and pepper to taste.
Once fully coated and heated through, remove from heat.
Transfer the glazed green beans to a serving dish and sprinkle with sesame seeds and chopped green onions for garnish.

For a vegan option, use maple syrup instead of honey.
