4 boneless, skinless chicken breasts

1 cup mushrooms, finely chopped (cremini or button)

1/2 cup fresh spinach, chopped

1/2 cup ricotta cheese

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Toothpicks or kitchen twine for securing

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant.

      Add the chopped mushrooms and thyme to the skillet. Cook for 5-7 minutes until the mushrooms are tender, and all moisture has evaporated.

        Stir in the chopped spinach and cook for an additional 2 minutes until wilted. Remove the skillet from heat and allow to cool slightly.

          In a mixing bowl, combine the cooked mushroom mixture with ricotta cheese, Parmesan cheese, salt, and pepper. Mix well to create the stuffing.

            Take each chicken breast and create a pocket by slicing it horizontally, being careful not to cut all the way through.

              Generously stuff each chicken pocket with the mushroom filling. Use toothpicks or kitchen twine to secure the opening, ensuring the stuffing stays inside.

                Season the outside of the stuffed chicken breasts with salt and pepper.

                  Place the stuffed chicken in a baking dish and cover it with aluminum foil. Bake in the preheated oven for 25 minutes.

                    Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                      Let the chicken rest for a few minutes before slicing and serving.
