In a bowl, whisk together the honey, lime juice, lime zest, minced garlic, ground cumin, paprika, olive oil, salt, and pepper to create the marinade.
Add the peeled and deveined shrimp to the marinade, making sure they are well coated. Allow them to marinate for at least 30 minutes (up to 2 hours in the refrigerator for more flavor).
Preheat your grill or grill pan over medium-high heat.
Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer depending on size.
Lightly oil the grill grates to prevent sticking, then place the shrimp skewers on the grill. Cook for 2-3 minutes on each side, or until the shrimp are opaque and just cooked through.
Remove from grill and garnish with fresh chopped cilantro before serving.
