Instructions
Begin by cooking the orzo pasta according to the package instructions. Once cooked, drain and rinse under cold water to cool.
In a large mixing bowl, combine the cooled orzo pasta, cherry tomatoes, cucumber, red onion, feta cheese, Kalamata olives, and fresh parsley.
In a separate small bowl, whisk together the lemon zest, lemon juice, olive oil, honey, salt, and pepper until well combined.
Pour the dressing over the salad mixture and gently toss everything together until all the ingredients are evenly coated.
Taste and adjust the seasoning with additional salt, pepper, or lemon juice as needed.
