In a large mixing bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, chopped rosemary, thyme, parsley, salt, and pepper to create the marinade.
Add the chicken breasts to the marinade, ensuring they are well coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 2 hours for maximum flavor.
Preheat the grill to medium-high heat (about 400°F or 200°C).
Remove the chicken from the marinade, letting any excess marinade drip off. Discard the leftover marinade.
Place the chicken breasts on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes to allow the juices to redistribute.
Serve the grilled chicken garnished with lemon slices and a sprinkle of fresh herbs.
