Ingredients
  

4 medium-sized potatoes, diced

1 tablespoon olive oil

1 red bell pepper, diced

1 green bell pepper, diced

1 small onion, finely chopped

4 large eggs

1 cup cherry tomatoes, halved

1 cup spinach, chopped

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

½ cup shredded cheese (cheddar or your choice)

Fresh herbs for garnish (chives or parsley)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and season with salt and pepper. Cook, stirring occasionally, for about 10-12 minutes, or until they are golden brown and tender.

    Add the chopped onion and bell peppers to the skillet. Sauté for an additional 5 minutes until the vegetables are softened.

      Sprinkle in the garlic powder and paprika, stirring to combine and let the spices infuse the mixture for about 1 minute.

        Add the halved cherry tomatoes and chopped spinach, cooking for another 2-3 minutes until the spinach wilts and the tomatoes soften.

          Create small wells in the mixture and crack an egg into each one. Cover the skillet and cook for about 5-7 minutes, or until the eggs are cooked to your desired level of doneness (runny yolks take less time).

            Once the eggs are cooked, sprinkle the shredded cheese over the top and let it melt for another minute.

              Remove from heat and garnish with fresh herbs before serving.
