Instructions
In a large mixing bowl, combine the shredded chicken, diced mango, diced avocados, diced red bell pepper, and finely chopped red onion.
In a separate small bowl, whisk together the lime juice, olive oil, honey (if using), salt, and pepper until well combined.
Pour the dressing over the chicken and fruit mixture.
Gently toss everything together until evenly coated, taking care not to mash the avocados.
Add the chopped cilantro and give one final toss to incorporate the flavors.
Taste and adjust seasoning, adding more salt, pepper, or lime juice if desired.
Notes
Serve in individual bowls or on a large platter, garnishing with extra cilantro and a wedge of lime on the side for a fresh touch.
