Instructions
Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
In a large mixing bowl, combine rolled oats, chopped nuts, shredded coconut, and salt.
In a separate bowl, whisk together the maple syrup, melted coconut oil, ground cinnamon, and vanilla extract until well blended.
Pour the wet mixture over the dry ingredients, and stir well to coat everything evenly.
Spread the granola mixture evenly on the prepared baking sheet.
Bake in the oven for about 20-25 minutes, stirring halfway through, until golden and fragrant.
Remove from the oven and let it cool completely on the baking sheet.
Once cooled, mix in the dried fruits to the granola and store it in an airtight container.
