Ingredients

4 boneless pork chops (about 1 inch thick)

4 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon unsalted butter

1 teaspoon dried thyme

1 teaspoon smoked paprika

1 teaspoon lemon zest

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Begin by patting the pork chops dry with paper towels. Season both sides generously with salt, pepper, smoked paprika, and dried thyme.

In a large skillet, heat the olive oil over medium-high heat. Once hot, add the pork chops and sear for about 4-5 minutes on each side, or until they develop a golden-brown crust and reach an internal temperature of 145°F (63°C). Remove from the skillet and tent with foil to keep warm.

In the same skillet, lower the heat to medium, add the butter, and let it melt. Add the minced garlic and red pepper flakes. Sauté for about 30-45 seconds until fragrant, being careful not to burn the garlic.

Stir in the lemon zest, scraping up any browned bits from the bottom of the skillet. Let the sauce simmer for 1-2 minutes, allowing the flavors to meld.

Return the pork chops to the skillet, spooning the garlic sauce over them. Cook for an additional minute to heat through.

Remove from heat and let the pork chops rest in the sauce for a couple of minutes.

Serve the pork chops whole or sliced, drizzled with the garlic sauce and topped with chopped fresh parsley.
