Red Snapper Shrimp Grits

2 cups water

1 cup stone-ground grits

1 cup sharp cheddar cheese, grated

1 tablespoon butter

Salt to taste

1 pound red snapper fillets

1 pound shrimp, peeled and deveined

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon Old Bay seasoning

1/4 teaspoon cayenne pepper (optional)

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium saucepan, bring water to a boil. Gradually stir in the stone-ground grits. Reduce heat to low and cover, cooking for about 20-25 minutes, stirring occasionally until the grits are creamy.

    Once cooked, remove the grits from heat, stir in the butter and grated cheddar cheese, then season with salt to taste. Keep covered to keep warm.

      While the grits are cooking, heat olive oil in a large skillet over medium heat. Season the red snapper fillets with smoked paprika, Old Bay, salt, and cayenne pepper if using.

        Place the seasoned red snapper fillets in the skillet and cook for about 4 minutes on each side or until the fish flakes easily with a fork. Remove from the skillet and set aside.

          In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp and cook for 3-4 minutes, or until they turn pink and opaque. Season with additional Old Bay, salt, and pepper if needed.

            To serve, dish out a generous portion of creamy grits onto each plate. Top with the sautéed shrimp, followed by the red snapper fillets.

              Garnish with sliced green onions and chopped parsley for a fresh finish.
