8 oz thick wheat noodles (or Shanghai noodles)

1 cup shredded cabbage

1 carrot, julienned

1 bell pepper (red or yellow), thinly sliced

1/2 cup bean sprouts

4 green onions, chopped

2 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons soy sauce

1 tablespoon oyster sauce (or mushroom sauce for a vegetarian option)

1 tablespoon sesame oil

1 tablespoon vegetable oil

Salt and pepper to taste

Optional: 1/2 cup cooked protein (chicken, shrimp, or tofu)

Cook the Noodles: Bring a large pot of water to a boil. Add the thick wheat noodles and cook according to package instructions until al dente. Drain and set aside, tossing them with a splash of vegetable oil to prevent sticking.

    Prepare the Stir-Fry Base: In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the minced garlic and ginger, stirring quickly for about 30 seconds until aromatic.

      Add Vegetables: Toss in the shredded cabbage, julienned carrot, and sliced bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

        Optional Protein: If you're using any cooked protein (chicken, shrimp, or tofu), add it to the skillet now to warm through.

          Combine Noodles and Sauce: Add the cooked noodles to the wok. Drizzle in the soy sauce, oyster sauce, and sesame oil. Toss everything together until the noodles are heated through and well coated with the sauce, about 2-3 minutes.
