Sheet Pan Lemon Garlic Salmon

Ingredients
  

4 salmon fillets (about 6 oz each)

4 tablespoons olive oil

4 cloves garlic, minced

2 lemons (1 sliced into rounds, 1 juiced)

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 cup green beans, trimmed

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, mix the olive oil, minced garlic, lemon juice, oregano, smoked paprika, salt, and pepper to create a marinade.

      Line a large baking sheet with parchment paper for easy cleanup.

        Place the salmon fillets on one side of the sheet pan. Brush generously with the marinade.

          On the other side of the sheet pan, arrange the cherry tomatoes and green beans. Drizzle the remaining marinade over the vegetables and toss to coat.

            Lay lemon slices on top of the salmon and scatter any extra lemon slices over the vegetables.

              Bake in the preheated oven for about 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.

                Once done, remove from the oven and let it rest for a few minutes.

                  Garnish with chopped fresh parsley before serving.
