1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

2 cups cooked quinoa

1 cup cherry tomatoes, halved

1 avocado, sliced

1 cup baby spinach or mixed greens

1/4 cup tahini

1 tablespoon lemon juice

Water to thin tahini, as needed

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chickpeas: In a mixing bowl, combine the drained chickpeas, olive oil, smoked paprika, cumin, cayenne pepper, salt, and pepper. Toss until the chickpeas are well coated.
