1 pre-made pie crust

2 cups fresh spinach, chopped

1 cup mushrooms, sliced (any variety)

1 small onion, finely chopped

3 large eggs

1 cup heavy cream

1 cup shredded cheese (cheddar or Gruyère work well)

1 teaspoon garlic powder

1/2 teaspoon nutmeg

Salt and pepper to taste

1 tablespoon olive oil

Instructions
 

Preheat your oven to 375°F (190°C).

    In a skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until they are translucent and soft.

      Add the sliced mushrooms to the skillet and cook until they are browned and have released their moisture, about 5-7 minutes.

        Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

          In a mixing bowl, whisk together the eggs, heavy cream, garlic powder, nutmeg, salt, and pepper until well combined.

            Stir in the sautéed vegetable mixture and shredded cheese into the egg mixture.

              Pour the mixture into the pre-made pie crust, spreading it evenly.

                Bake in the preheated oven for 35-40 minutes, or until the quiche is set in the middle and lightly golden on top.

                  Allow the quiche to cool for about 10 minutes before slicing.
