3 cups frozen hash browns, thawed

1/4 cup butter, melted

6 large eggs

1 cup whole milk

1 cup shredded cheese (cheddar or your choice)

1 cup fresh spinach, chopped

1 cup cherry tomatoes, halved

1/2 cup cooked bacon or turkey bacon, crumbled (optional)

1 teaspoon garlic powder

Salt and pepper to taste

Fresh chives or parsley for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large bowl, combine the thawed hash browns with melted butter, mixing until evenly coated. Season with salt and pepper to taste.

      Press the hash brown mixture into the bottom and up the sides of a 9-inch pie dish or tart pan to form a crust.

        Bake the hash brown crust in the preheated oven for 20-25 minutes or until it is golden and crispy. Remove from the oven and allow to cool slightly.

          In a separate bowl, whisk together the eggs, milk, garlic powder, salt, and pepper.

            Stir in the shredded cheese, chopped spinach, halved cherry tomatoes, and crumbled bacon (if using) into the egg mixture.

              Pour the egg mixture into the prepared hash brown crust, spreading it evenly.

                Reduce the oven temperature to 350°F (175°C) and bake the quiche for 30-35 minutes or until the center is set and slightly puffed.

                  Allow the quiche to rest for about 10 minutes before slicing.
