1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

1/4 cup honey

3 tablespoons soy sauce

1 tablespoon rice vinegar

2 cloves garlic, minced

1 teaspoon grated fresh ginger

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame oil

Salt and pepper to taste

2 green onions, sliced for garnish

Sesame seeds for garnish

Instructions
 

In a medium bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, and grated ginger until well combined. Set this sauce mixture aside.

    In a large skillet or wok, heat the sesame oil over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the hot skillet. Cook for about 5-7 minutes, stirring frequently, until the chicken is browned and cooked through.

      Once the chicken is cooked, pour the honey sauce mixture over the chicken in the skillet. Stir to coat the chicken evenly.

        In a small bowl, mix the cornstarch and water to create a slurry. Add this slurry to the skillet and stir well. This will thicken the sauce. Cook for an additional 2-3 minutes, allowing the sauce to bubble and become sticky.

          Remove from heat, and let it sit for a minute to thicken further if desired.

            Serve the sticky honey chicken hot, garnished with sliced green onions and a sprinkle of sesame seeds.
