2 cups jasmine rice

1 lb chicken breast, diced

1 cup fresh pineapple, diced

1 red bell pepper, sliced

1 cup snow peas

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon sesame oil

1 teaspoon grated ginger

2 cloves garlic, minced

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Salt and pepper to taste

Chopped green onions for garnish

Sesame seeds for garnish

Instructions
 

Rinse the jasmine rice under cold water until the water runs clear. Cook it according to package instructions and set aside once done.

    In a large pan over medium heat, add sesame oil. Once hot, add the diced chicken. Season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.

      Add the minced garlic and grated ginger to the pan, stirring for about 1 minute until fragrant.

        Toss in the sliced red bell pepper and snow peas. Sauté for an additional 3-4 minutes until the vegetables are tender-crisp.

          In a bowl, whisk together soy sauce, honey, and the cornstarch slurry. Pour this mixture over the chicken and vegetables, then add the diced pineapple. Stir well to coat everything in the sauce and cook for about 2-3 minutes until the sauce thickens.

            Check for seasoning and adjust with more salt or pepper if needed.

              Serve the sweet pineapple chicken mixture over a bed of jasmine rice.

                Garnish each serving with chopped green onions and a sprinkle of sesame seeds.
