In a medium bowl, whisk together the soy sauce, honey, sesame oil, minced garlic, grated ginger, and rice vinegar until well combined. This will be your marinade.
Place the salmon fillets in a shallow dish or a resealable plastic bag and pour the marinade over them. Ensure the salmon is well-coated. Marinate in the refrigerator for at least 30 minutes (or up to 2 hours for a deeper flavor).
Preheat your oven to 400°F (200°C).
Line a baking sheet with parchment paper or lightly grease it to prevent sticking.
Remove the salmon from the marinade, allowing excess marinade to drip off, and place the fillets skin-side down on the prepared baking sheet.
Season each fillet lightly with salt and pepper.
Bake in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked to your liking.
While the salmon is baking, pour the remaining marinade into a small saucepan and bring to a simmer over medium heat. Cook for about 5-7 minutes, until slightly thickened.
Once the salmon is done, drizzle the thickened glaze over the fillets.
Garnish with chopped green onions and sesame seeds before serving.
