1 pound baby carrots (or regular carrots cut into sticks)

3 tablespoons olive oil

3 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 teaspoon honey (or maple syrup for a vegan option)

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the olive oil, minced garlic, lemon zest, lemon juice, honey, smoked paprika, salt, and pepper. Whisk until well blended.

      Add the carrots to the bowl and toss them in the lemon garlic mixture until they are evenly coated.

        Spread the coated carrots in a single layer on a roasting pan lined with parchment paper.

          Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and lightly caramelized, stirring halfway through.

            Once cooked, remove the carrots from the oven and transfer them to a serving dish.

              Drizzle any remaining juices from the roasting pan over the carrots and top with freshly chopped parsley.

                Serve warm as a delightful side dish.
