Instructions
Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan with non-stick spray or line it with parchment paper for easy removal.
In a mixing bowl, combine the drained crushed pineapple, shredded coconut, melted butter, coconut milk, and vanilla extract. Mix well until combined.
In another bowl, whisk together the flour, sugar, baking powder, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix; a few lumps are okay.
In a separate small bowl, beat the eggs until frothy. Slowly fold the eggs into the batter until everything is incorporated.
Pour the mixture into the prepared baking pan, spreading it evenly to the corners.
Bake in the preheated oven for 25-30 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.
Remove from the oven and allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Once cooled, slice into bars and serve.
Notes
Optional: sprinkle with additional shredded coconut for garnish.
